Discard Crackers: The Best Thing to Do with Leftover Starter
What discard is
Every time you feed your starter, you remove most of it before adding fresh flour and water. That removed portion is called discard. It's not dead — it still has active yeast and bacteria, just not enough to raise a full loaf. But it has plenty of flavor, and it makes excellent crackers.
Discard crackers are the easiest thing you can make with sourdough. No shaping, no proofing, no Dutch oven. Mix, rest, roll, bake.
The dough
Mix everything together until a shaggy dough forms. It will come together quickly. Cover and refrigerate — the dough keeps in the fridge for up to a week. Bake whenever you're ready.
Baking
Preheat oven to 350°F. Line a baking sheet with parchment.
Divide the dough in half. Roll each half directly on parchment as thin as you can get it — 1–2mm. Thinner is crispier. Sprinkle with flaky salt and any toppings. Use a pizza cutter or knife to score into rough rectangles (they don't need to be perfect — they'll break apart after baking).
Bake 20–25 minutes until golden and crisp. Watch the edges — they brown faster than the center. Cool completely on the pan before breaking apart.
Storage and sharing
Crackers keep at room temperature in an airtight container for 2–3 weeks. They're one of the best things to bring to someone's house — easy to make in quantity, impressive, and a natural conversation starter about sourdough.
If you want to share the dough instead of the finished crackers: portion it into small zip-lock bags (about 180g each, enough for one batch), label with baking instructions, and hand them out. The dough keeps refrigerated for up to a week, so recipients can bake on their own schedule.
Variations
The base recipe is a blank canvas. A few combinations that work well:
Herb and sea salt: flaky salt + fresh rosemary + black pepper Sesame: 2 tbsp sesame seeds mixed into the dough + flaky salt on top Everything: everything bagel seasoning pressed into the surface before baking Parmesan: 20g finely grated parmesan mixed into the dough Spicy: pinch of cayenne + smoked paprika in the dough
All of these use the same base dough. Mix, refrigerate, roll, bake.
