Mental Models for Better Bread
Think in systems, not recipes
A recipe tells you what to do. A mental model tells you why — and what to do when things go wrong.
The most useful mental model for bread: fermentation is a rate, not a timer. The clock tells you when to check. The dough tells you when it's done. Temperature sets the rate. Everything else is a consequence of fermentation.
The dough strength continuum
There are numerous ways to accomplish the stretching and folding. Some methods call for dumping the dough out onto the counter to strengthen it. I prefer to do stretching and folding right in the bulk fermentation container because it is easy to handle most dough sizes, keeps surfaces clean, and is very effective.
Your job during bulk fermentation is to move the dough along this continuum to the right point: strong enough to hold its shape through shaping and proofing, but not so strong that it's tight and resistant.
Steam is structure
Throughout this book, many recipes indicate you should bake a loaf until the interior reaches around 206° to 208°F (96° to 97°C), which is a good range for many loaves. Enriched doughs (that is, dough with egg, butter, or sugar) are typically considered fully baked when the internal temperature is around 195°F (90°C), but sometimes higher. This is why the Dutch oven is so effective: it traps the water vapor escaping from the dough itself, creating the perfect steaming environment without any extra equipment.
The crumb tells the story
Open, irregular holes of different sizes: good fermentation, good shaping. Tight, uniform, small bubbles: underfermented — give it more time next bake. Large holes near the top, dense at the bottom: overproofed. Gummy texture: cut too early, or underfermented. Lopsided rise: uneven shaping tension. Crust that split unexpectedly: underproofed, insufficient scoring, or insufficient steam.
Read the crumb after every bake. It's the most honest feedback you'll get.

The second loaf is always better
The first loaf teaches you what your kitchen does. The second loaf is where you apply that knowledge. Write down: dough temperature after mixing, how long bulk took, how the dough felt at shaping, what the crumb looked like. Four data points per bake. After three bakes, you'll have a pattern.
Bread baking is a skill that compounds. Each bake makes the next one easier, because you're building a mental model of how your specific flour, your specific kitchen, and your specific schedule interact.
